ABOUT THE CUISINE

Tajik cuisine, with its roots in the ancient Silk Road city of Samarkand, is a beautiful blend of flavours and traditions from across Central Asia. Influenced by Persian, Turkish, and Russian cooking, it celebrates fresh ingredients, aromatic herbs, and gentle spices. From fragrant rice dishes like Palav to soft, hand-folded dumplings and vibrant salads, every meal is a reflection of generosity, hospitality, and the joy of sharing food together. Tajik cooking is colourful, comforting, and deeply tied to family and community — food made to be enjoyed with love.


ABOUT THE CHEF

A message from chef Sanobar:

“My name is Sanobar and I am from the ancient city of Samarkand, Uzbekistan. It is in the middle of the Silk Roads, which means it has been a crossroads for trade and remains a melting pot of different cultures. The food culture is very colourful, taking ingredients and flavours from many cuisines. My family is Tajik and so the food I have grown up with and will teach in my classes is based around this culture

I learned to cook from a very young age from my mother and grandmother. The village where I grew up had cows, sheep, fruits and vegetables and all of my favourite recipes are based on fresh ingredients. I have nine siblings. My mother was our hero feeding her large family every day.

Cooking for my family also brings me great joy and I would love to share my recipes with you. Palav is a traditional rice dish that in 2016 was designated ‘King of Meals’ by UNESCO – after more than 1000 years since its creation it has been recognised as part of central Asia’s cultural heritage.”

THE CLASS FORMAT

Our cookery classes are family-style - meaning everyone works together to prepare the dishes as a team.While you’ll be asked to choose one dish to focus on, you’ll have the opportunity to move around the kitchen, help with other dishes, and learn from each recipe. It’s a fun, social, and collaborative way to cook! At the end of the class, you’ll sit down with the chef, class facilitator and volunteers to enjoy the delicious meal you’ve created together.
