ABOUT THE CUISINE

Palestinian cuisine has a rich culinary history shaped by agriculture, trade, and centuries of cultural exchange. From Gaza’s fresh seafood to the fertile hills of the West Bank producing olive oil, herbs, and vegetables, Palestinian food is vibrant, seasonal, and full of flavour. Dishes like Sayadieh (seafood rice), stuffed vine leaves, and crispy flatbreads are made to be shared, highlighting the social, hands-on nature of meals. Every dish reflects the warmth, generosity, and heritage of Palestinian culture.


ABOUT THE CHEF

A message from chef Amna:

“My name is Amna from Gaza, Palestine and I came to the UK in the winter of 2022. In Gaza, I was a university lecturer in psychology for 20 years and a director of a charity supporting mothers and children. I have 5 children: 2 daughters who still live in Gaza, a son and daughter in Canada and a son in London.

As a young woman, I lived in Libya. I married there, brought up my children and achieved my degree and my Masters. Libya’s sky seemed open to my dreams and I was very happy there.

When I first arrived in the UK, I had nothing here and felt lonely and ashamed. I am thankful to have become part of the Migrateful family. Migrateful has helped me feel more positive and I am happy to share my food and my culture.

When I cook I always think of my mother. I don’t use recipes but cook by a sense I inherited from her. My mother and father always talked about their life before Gaza – I have never been to their home in Ashdod but I feel I know it. My father caught fish, and they always had fresh vegetables from the countryside. I am passionate about making healthy and nutritious food. It is so important for our lives and our physical and mental health. The process of cooking lifts me, especially when I do it with others – and people are always appreciative when I offer them my food!”

  • Waraq Enab (Stuffed Vine Leaves) | Vegan; Celery
  • Fattet Makdous (Fried Aubergine with Tahini Yogurt & Crispy Flatbread) | Vegetarian; Gluten (Wheat), Milk, Tree Nuts (Almonds), Sesame, Sulphites
  • Salata Falastinia (Palestinian Salad) | Vegan; Sesame
  • Shurbet Addas (Lentil Soup) | Vegetarian; Celery, Milk
  • Fatayer Sabaanja Wa Jubneh (Flatbreads Stuffed with Spinach and Cheese) | Vegetarian; Eggs, Gluten (Wheat), Milk, Sesame

This menu contains fish (cod and prawns) but is vegetarian-friendly (5/6 dishes are meat-free). Allergens include: celery, crustaceans, eggs, fish, gluten, milk, sesame, sulphites, tree nuts.

Please let us know if you have any specific dietary requirements so our team is aware ahead of the class. Kindly note that we will not be substituting any ingredients to accommodate dietary needs, so please only book into classes that suit your dietary requirements.

THE CLASS FORMAT

Our cookery classes are family-style - meaning everyone works together to prepare the dishes as a team.

While you’ll be asked to choose one dish to focus on, you’ll have the opportunity to move around the kitchen, help with other dishes, and learn from each recipe. It’s a fun, social, and collaborative way to cook! At the end of the class, you’ll sit down with the chef, class facilitator and volunteers to enjoy the delicious meal you’ve created together.
