Squash season begins in the Autumn with with the Halloween pumpkin fest, but this versatile winter staple offers so much more to our diets, giving us sweet flavours right the way through to the spring. This Joyfull Greens recipe features pan-roasted squash in a rich lentil sauce strong in flavours of ginger and chilli. Accompanied by chickpeas, this dish has all of the protein and fibre that we need to power our active lives.
