
Do you want to be envied by your coworkers for having the tastiest lunches? If so, please join us for a hands-on cooking class where we will prepare nutritious, quick, affordable, and satisfying plant-based lunches with minimal food waste. We will make an entree salad (Budda bowl), soup (butternut squash or tomato orzo), and sandwich (chickpea salad) -- enough variety for at least a week's worth of lunches/lunch combinations. Recipes will be provided, including alternative ingredients for vegans.
Laurie Weidner enjoys taking and teaching cooking classes at the Co-op. Her family is convinced that one of her superpowers is making mealtime masterpieces from whatever ingredients are on hand in the kitchen. She enjoys elevating the brown bag lunch experience with tasty nutritious recipes.
